Spicy Sweet Ayam Masak Merah Recipe
Ingredients:
- 1 kg chicken, cut into pieces
- 2 bay leaves
- Salt, to taste
- Seasoning powder, to taste
- Brown sugar
- White sugar
- A dash of soy sauce
- 15 bird’s eye chilies (cabe rawit)
- Cooking oil
- Water
Spice Paste:
- 12 red chilies
- 7 shallots
- 4 cloves garlic
- 3 candlenuts (previously roasted)
- 1 segment of ginger
Instructions:

Prepare the Spice Paste:
- In a food processor, blend together the red chilies, shallots, garlic, candlenuts, and ginger until smooth.

Cooking the Dish:
- Heat some cooking oil in a pan over medium heat. Add the spice paste and sauté until fragrant.
- Add the chicken pieces to the pan and stir-fry briefly until they are coated with the spice paste.

- Pour in a small amount of water to help the chicken absorb the flavors and cook thoroughly.
- Season with salt, bay leaves, seasoning powder, brown sugar, and white sugar. Stir well to combine.
