Ayam Kecap Pedas (Spicy Sweet Soy Chicken)
Ingredients:
- 1 whole chicken
- For the spice paste (Bumbu Ungkep):
- 15 red chili peppers
- 10 bird’s eye chilies
- 5 shallots
- 4 cloves garlic
- Salt, to taste
- Sugar, to taste
- Sasa seasoning, to taste
- Sweet soy sauce (kecap manis), to taste
- 2 bay leaves
- 1 stalk lemongrass, bruised
Instructions:

Prepare the Chicken:
- Begin by cleaning and cutting the chicken into desired pieces. Place the chicken in a pressure cooker with a small amount of water. Add the bay leaves and bruised lemongrass.
- Cook under pressure for about 10 minutes to ensure the chicken is tender and fully cooked.

Fry the Chicken:
- Once the chicken is cooked in the pressure cooker, carefully remove it and set it aside. Heat oil in a frying pan over medium heat and fry the chicken pieces until they are golden and crispy. Set aside.

Prepare the Spice Paste:
- While the chicken is frying, prepare the spice paste. Slice the red chili peppers, bird’s eye chilies, shallots, and garlic into thin slices.
- Heat 2 tablespoons of oil in a pan. Add the sliced chili peppers, bird’s eye chilies, shallots, and garlic. Sauté until fragrant and golden brown.

Combine and Simmer:
- Add salt, sugar, and Sasa seasoning to the sautéed mixture according to taste. Stir well to combine.
- Pour in the sweet soy sauce (kecap manis) and cook the mixture until it starts to bubble and thicken slightly.

Mix with Fried Chicken:
- Add the fried chicken pieces to the pan with the spice paste. Stir well to coat the chicken evenly with the sauce. Continue to cook for a few more minutes, allowing the flavors to meld together.

Finish and Serve:
- Once the sauce has thickened and coated the chicken well, turn off the heat. Transfer the spicy sweet soy chicken to a serving platter.
- Serve hot with steamed rice or your preferred side dishes.
