Tahu Gejrot Recipe

Ingredients

Brown tofu (Tahu coklat kopong) 1 piece
Palm sugar (gula merah) 3 cups
Water (air putih) 3 cups
Tamarind water (air asam jawa) 3 tablespoons
Salt (garam) to taste
Green chilies (rawit hijau) to taste
Shallots (bawang merah) to taste

Instructions

  1. Prepare the Sauce: In a medium saucepan over medium heat, dissolve the palm sugar in water, adjusting the sweetness by adding more or less water as desired.
  2. Add Tamarind: Once dissolved, stir in the tamarind water and a pinch of salt. Allow the mixture to cool.
  3. Prepare the Condiments: In a mortar and pestle, grind the shallots, green chilies, and a bit of salt to your preferred taste. Set aside.
  4. Serve: Cut the tofu into bite-sized pieces and place them in a bowl. Pour the cooled sugar-tamarind mixture over the tofu and mix well.
