Ingredients

Red curly chili peppers 5, chopped
Bird’s eye chili peppers 3, chopped
Shallots 5 cloves, chopped
Garlic 3 cloves, minced
Palm sugar 1 piece
Salt To taste
Kaffir lime leaves 3 leaves
Cooking oil For frying and sautéing

Instructions

  1. Fry the Tempeh: Heat oil in a pan over medium heat. Fry the tempeh pieces until golden and crispy. Once done, remove from heat and set aside.

  2. Prepare the Spice Paste: In a mortar and pestle or food processor, blend together the red curly chili peppers, bird’s eye chili peppers, shallots, garlic, and palm sugar until you achieve a smooth paste.

  3. Sauté the Spice Paste: In the same pan, add a bit more oil if needed. Sauté the blended spice paste over medium heat. Add salt and the kaffir lime leaves, cooking until the sugar begins to caramelize and bubble.

  4. Combine with Tempeh: Once the spice paste is cooked and aromatic, gently fold in the fried tempeh, ensuring each piece is well coated with the flavorful mixture. Stir until evenly mixed.

  5. Serve: Your Tempe Orek Pedas Manis is ready to be enjoyed! For storage, let it cool completely before placing it in a jar to maintain its crispiness.
