Sayur Mrica Balungan Sapi (Spicy Beef Rib Soup)

Ingredients:

  • 1 kg beef ribs
  • Spice Paste:
    • 15 shallots
    • 20 red curly chilies
    • 15 bird’s eye chilies
    • 2 candlenuts
    • 1 teaspoon black pepper
    • 1 handful tamarind
    • Salt, sugar to taste
    • Optional: flavor enhancer (to taste)

Instructions:

  1. Prepare the Beef Ribs:

    • In a large pot, bring approximately 1.5 liters of water to a boil. Add the beef ribs and cook until tender.
  2. Make the Spice Paste:

    • While the beef is cooking, prepare the spice paste. In a blender or food processor, combine the shallots, red curly chilies, bird’s eye chilies, candlenuts, and black pepper. Blend until the mixture forms a smooth paste.
  3. Cook the Spice Paste:

    • Once the beef ribs are tender, add the spice paste to the pot. Stir well to ensure the paste is thoroughly mixed with the beef and broth.
  4. Add Tamarind:

    • Incorporate the tamarind into the pot. Continue cooking until the soup comes to a boil and the flavors meld together.
  5. Season and Adjust:

    • Season the soup with salt, sugar, and optional flavor enhancer to taste. Allow the soup to simmer, letting the flavors develop and the beef become even more tender.
  6. Final Touches:

    • Ensure there is some broth left in the pot for a soupy consistency. Taste and adjust the seasoning if needed.
  7. Serve:

    • Serve the Sayur Mrica Balungan Sapi hot, with a garnish of your choice if desired.
