Ingredients

Instructions

  1. Prepare the Tempeh: Cut the tempeh into small cubes, roughly the size of a matchstick. Heat oil in a pan over medium heat and fry the tempeh until it becomes crispy and golden brown. Remove and drain on paper towels.

  2. Prepare the Jengkol: Clean and cut the jengkol into smaller pieces. Fry them in the same oil until golden brown. Remove and set aside.

  3. Sauté the Spice Paste: In the same pan, add more oil if necessary. Sauté the spice paste, which includes the chopped red chili, garlic, shallots, coriander, and tomato, until fragrant and the spices are well cooked.

  4. Combine Ingredients: Once the spices are aromatic, add the fried tempeh and jengkol to the pan. Pour in a little water to help meld the flavors together.

  5. Season to Taste: Let everything simmer for a few minutes until the tempeh and jengkol absorb the spices. Adjust the seasoning with chicken seasoning (Royko) and sugar according to your taste preference.
