Ingredients:

  • 1 block of firm tofu, cut into cubes
  • 1/2 piece of tempeh, sliced into cubes
  • 1/2 ounce of Medan anchovies (teri medan)
  • Spice Paste:
    • 6 red curly chilies (cabai merah keriting)
    • 2 cloves of garlic
    • 3 shallots
    • 1/2 tomato
    • Salt, to taste
    • White sugar, to taste
    • Palm sugar, to taste

Instructions:

  1. Fry the Ingredients: Begin by frying the tofu, tempeh, and anchovies until they are crispy. Once fried, remove them from the oil and set aside.

  2. Prepare the Spice Paste: In a blender, combine the red chilies, garlic, shallots, and tomato. Blend until smooth to create the spice paste.

  3. Cook the Spice Paste: Heat a bit of oil in a pan over medium heat. Add the blended spice paste and sauté until the paste becomes fragrant and starts to cook through. Add a little water if needed to help cook the paste evenly.

  4. Season the Sauce: Once the spice paste is cooked, season it with salt, white sugar, and palm sugar to taste. Stir well to combine and let the mixture simmer until the flavors meld together.

  5. Combine Ingredients: Add the fried tofu, tempeh, and anchovies to the pan with the spice paste. Stir gently to ensure that all the pieces are coated with the sauce. Cook for a few more minutes, allowing the flavors to blend.

  6. Serve: Once everything is well-mixed and heated through, remove from heat. Serve the Orak-Arik Tempe, Tahu, and Teri warm with steamed rice or as a side dish.
