Sambal Goreng Tempe & Tahu

Ingredients

Tempe 1 package
Tahu 6 pieces
Red chilies 10 pieces
Shallots 5 pieces
Garlic 3 cloves
Palm sugar 1 bunch
Kaffir lime leaves 3 leaves
Galangal 1 piece
Tamarind water 3 tablespoons
Sweet soy sauce 1 tablespoon
Salt to taste
Cooking oil for frying

Instructions

  1. Prepare the Ingredients: Start by cutting the tempe and tahu into bite-sized pieces. Heat oil in a pan for frying, ensuring the pieces are golden but not overly crispy.

  2. Make the Spice Paste: In a mortar and pestle, grind together the shallots, garlic, red chilies, and galangal until you achieve a smooth paste.

  3. Sauté the Spices: Heat a pan over medium heat, adding a little oil if necessary. Sauté the ground spice paste until fragrant. Then, incorporate the galangal, kaffir lime leaves, salt, palm sugar, sweet soy sauce, and tamarind water. Stir well and cook until the mixture thickens.

  4. Combine: Taste and adjust seasoning as needed. Add the fried tempe and tahu to the spice mixture, reducing the heat. Gently stir to ensure all pieces are evenly coated.

  5. Serve: Turn off the heat and transfer the sambal goreng tempe & tahu to a serving dish. Enjoy this flavorful dish warm with steamed rice or as part of a larger meal.
