Prepare the Ingredients: Start by cutting the tempe and tahu into bite-sized pieces. Heat oil in a pan for frying, ensuring the pieces are golden but not overly crispy.

Make the Spice Paste: In a mortar and pestle, grind together the shallots, garlic, red chilies, and galangal until you achieve a smooth paste.

Sauté the Spices: Heat a pan over medium heat, adding a little oil if necessary. Sauté the ground spice paste until fragrant. Then, incorporate the galangal, kaffir lime leaves, salt, palm sugar, sweet soy sauce, and tamarind water. Stir well and cook until the mixture thickens.
