Stir-Fried Green Beans with Scrambled Eggs

Ingredients:

  • 1/4 pound green beans
  • 1 large egg
  • 10 Thai bird chilies
  • 2 large green chilies
  • 3 shallots
  • 2 cloves garlic
  • Salt, to taste
  • Sugar, to taste
  • Optional: Flavor enhancer (e.g., bouillon powder)
  • 1 thumb-sized piece of galangal, smashed
  • 1 thumb-sized piece of ginger, smashed
  • 2 bay leaves
  • Sweet soy sauce (kecap manis), to taste

Instructions:

  1. Prepare the Green Beans: Begin by washing the green beans thoroughly. Trim the ends off and slice them diagonally into thin pieces. Set aside.

  2. Prepare the Aromatics: Finely chop the shallots and garlic. Slice the green chilies and Thai bird chilies.

  3. Sauté the Aromatics: Heat a little oil in a pan over medium heat. Add the chopped shallots, garlic, and sliced chilies. Sauté until the mixture becomes fragrant. Add the bay leaves.

  4. Scramble the Egg: Push the aromatics to one side of the pan and crack the egg into the empty space. Scramble the egg gently until it starts to set.

  5. Combine Ingredients: Add the sliced green beans to the pan. Stir to combine the egg and green beans with the aromatic mixture.

  6. Season: Add the sweet soy sauce, salt, sugar, and optional flavor enhancer. Stir well to ensure all ingredients are evenly coated with the seasoning.

  7. Adjust the Taste: Taste and adjust the seasoning if necessary. Cook until the green beans are tender but still crisp, and the egg is fully cooked. Be careful not to overcook.
