Ingredients:

  • 3 pieces of white tofu, cut into large cubes
  • 1 packet of tauco (fermented soy bean paste)
  • 1 handful of ikan teri (fried anchovies)
  • For the sliced spices:
    • 2 cloves of garlic
    • 2 shallots
    • 4 green chilies
    • 10 bird’s eye chilies (adjust to taste for heat level)
    • 1 stalk of green onion
    • 8 red chilies (finely ground)
  • 1 tablespoon of granulated sugar (adjust to taste)
  • 100 ml water
  • Cooking oil, for sautéing

Instructions:

  1. Prepare the Tofu: Clean the tofu and cut it into large cubes. Heat oil in a pan and fry the tofu cubes until they are slightly golden. Remove from the pan and drain excess oil.

  2. Fry the Anchovies: In the same pan, add more oil if necessary and fry the ikan teri until crispy. Remove from the pan and set aside to drain.

  3. Sauté the Spices: In the same pan, add a bit more oil and sauté the sliced garlic, shallots, green chilies, and bird’s eye chilies until fragrant. Add the finely ground red chilies and continue to cook briefly.

  4. Combine Ingredients: Add the crispy ikan teri to the pan, followed by the tauco and sugar. Stir well to combine. Pour in the water and bring the mixture to a simmer.

  5. Add Tofu: Gently fold in the fried tofu cubes and allow the mixture to simmer until the tofu absorbs the flavors and the sauce thickens slightly.

  6. Adjust Seasoning: Taste and adjust the seasoning as needed. Note that tauco is already salty, so you might not need additional salt.

  7. Serve: Once everything is well combined and heated through, turn off the heat. Serve the Triple T Masak Pedas hot, paired with steaming white rice for a satisfying meal.
