Spicy Tofu and Egg with Explosive Sambal

Tahu Telur Ceplok Sambal Granat 🍳😤😤😤

Ingredients:

  • 2 eggs
  • 6 pieces of Bandung tofu
  • 1 bay leaf
  • 1 thumb-sized piece of galangal

Spice Paste:

  • 35 bird’s eye chilies
  • 10 red chilies
  • 6 shallots
  • 2 cloves of garlic
  • 1 1/2 candlenuts
  • 1 teaspoon of salt

Instructions:

  1. Prepare the Tofu:

    • Clean the tofu thoroughly and cut it into pieces according to your preference.
  2. Fry the Tofu and Eggs:

    • Heat oil in a pan and fry the tofu until golden brown. Set aside.
    • Fry the eggs sunny-side up and set aside.
  3. Make the Spice Paste:

    • Using a mortar and pestle or a blender, grind the bird’s eye chilies, red chilies, shallots, garlic, candlenuts, and salt until you achieve a smooth paste.
  4. Cook the Tofu and Spice Paste:

    • Heat some oil in a pan and sauté the spice paste, along with the galangal and bay leaf, until fragrant.
    • Add the fried tofu into the pan and stir to coat the tofu with the spice paste.
  5. Add Water and Simmer:

    • Pour in a sufficient amount of water to create a sauce and let it simmer until it starts to boil.
  6. Add the Eggs:

    • Gently add the fried eggs to the pan, stir slowly, and let it simmer until the flavors meld and the sauce thickens.
  7. Final Adjustments:

    • Once the water has reduced and the sauce has thickened, taste and adjust the seasoning if needed.
    • Remove from heat and serve the Tahu Telur Ceplok Sambal Granat hot, garnished with fresh herbs if desired.
