Description:

Ingredients:

  • 2 large tins (28-ounce each) Italian plum tomatoes (do NOT drain)
  • 1 cup cider vinegar
  • 2 apples
  • 1 onion
  • 1 stalk celery
  • 3/4 cup brown sugar
  • 2 teaspoons coarse salt
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon cayenne pepper

Instructions:

  1. Prepare Ingredients: Start by ensuring your plum tomatoes are large tins and not drained. Peel and chop the apples, onion, and celery.

  2. Combine Ingredients: In a large heavy pot, combine the plum tomatoes, cider vinegar, chopped apples, onion, celery, brown sugar, coarse salt, ground allspice, ground cinnamon, ground cloves, and cayenne pepper.

  3. Cook: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and cook uncovered for approximately 90 minutes. Stir occasionally to prevent sticking.

  4. Thicken: As the sauce cooks, the tomatoes will naturally break apart. You can help this process along by gently pressing them against the side of the pot with a wooden spoon. Continue simmering until the sauce reaches your desired thickness.

  5. Package: Once the chili sauce has thickened to your liking, pour it into hot, sterilized jars, leaving a bit of headspace. Seal the jars tightly.

  6. Storage: You have two options for storing the chili sauce. You can process the jars in a hot water bath for longer-term storage, or simply refrigerate them. The sauce keeps well in the fridge and tends to be consumed quickly due to its delicious flavor.

  7. Serve or Gift: This recipe yields approximately seven cups of chili sauce. You can portion it into pint-sized jars for your family’s use and distribute the rest into smaller 1-cup jars to share with friends and family.
