Mangut Tongkol Tahu Recipe

Ingredients:
- 2 whole tuna (tongkol), cleaned and cut into pieces
- 3 blocks of tofu, cut into cubes
- 65 ml Kara coconut milk
- 2 stalks of lemongrass, bruised
- 3 cm galangal, sliced
- 2 kaffir lime leaves
- 2 large red chilies, sliced
- For the spice paste:
- 3 cloves garlic
- 5 shallots
- 7 bird’s eye chilies
- 2 candlenuts
- 1 thumb-sized piece of ginger
- 1 thumb-sized piece of turmeric
- 2 cm kencur (aromatic ginger)
- 1/4 nutmeg
- 1 teaspoon coriander seeds
- Sugar, to taste
- Salt, to taste
- A bit of water
Instructions:

Prepare the Spice Paste:
- In a blender or food processor, combine garlic, shallots, bird’s eye chilies, candlenuts, ginger, turmeric, kencur, nutmeg, and coriander seeds. Blend until you achieve a smooth paste.

Cook the Spice Paste:
- Heat a bit of oil in a pan over medium heat. Add the spice paste and sauté until fragrant, about 2-3 minutes.

Add Aromatics:
- Incorporate the bruised lemongrass, sliced galangal, kaffir lime leaves, and sliced red chilies into the pan. Continue to sauté until the mixture is aromatic and well combined.

Add Liquid and Fish:
- Pour in a little water to help the spices meld together. Add the pre-fried tuna pieces to the pan. Cook for a few minutes, allowing the flavors to infuse into the fish.

Incorporate Tofu:
- Gently stir in the pre-fried tofu cubes. Cook for another few minutes to let the tofu absorb the flavors.

Add Coconut Milk:
- Pour in the coconut milk and stir well. Season with sugar and salt to taste. Adjust the seasoning as needed.

- Let the mixture simmer until the liquid has reduced and thickened slightly, and the fish is fully cooked, about 10-15 minutes.
