Spicy Tuna Recipe (Tongkol Cabe Gendot)

Ingredients

  • 250 grams of tuna (cut into chunks)
  • 3 pieces of cabe gendot (large chili peppers)
  • 3 pieces of cabe rawit (small chili peppers)
  • 3 green tomatoes
  • 5 cloves of shallots
  • 5 cloves of garlic
  • Water (as needed)
  • Oil (for frying and sautéing)
  • Salt (to taste)
  • Sugar (to taste)
  • Seasoning (to taste)

Instructions

  1. Prepare the Tuna: Heat some oil in a pan and fry the tuna pieces until they are half-cooked. Remove from the pan and set aside.

  2. Sauté Aromatics: In the same pan, add more oil if needed and sauté the shallots and garlic until they become fragrant.

  3. Combine Ingredients: Add the small chili peppers to the pan and sauté briefly. Then, return the partially cooked tuna to the pan and stir to combine.

  4. Add Liquids: Pour in enough water to cover the ingredients. Stir well and bring to a gentle simmer.

  5. Incorporate Vegetables: Add the large chili peppers and green tomatoes to the pan. Continue to cook until the chili peppers and tomatoes are softened and cooked through.

  6. Season to Taste: Adjust the seasoning by adding salt, sugar, and any additional seasoning to your preference. Taste and adjust as needed.

  7. Serve: Once everything is well-cooked and flavors are well-balanced, remove from heat. Serve hot and enjoy!
