Ingredients:

  • 5 tomatoes
  • 1/2 cup fresh spinach
  • 1 garlic clove
  • 2 tablespoons pine nuts

Instructions:

6 Stir the spinach and nut mixture into the cooked rice.

8 Spoon the rice mixture into the hollowed-out tomatoes and place them in a shallow casserole dish.
9 Preheat the oven to 250ยฐF (120ยฐC) and bake the stuffed tomatoes for 15-20 minutes, or until they are just tender but not too soft.
