Step Description
1 Begin by preparing the popcorn. In a large pan, pour a small amount of olive oil and add the popcorn kernels. Cover the pan with a lid.
2 As the kernels pop, keep an eye on the temperature. When the sugar begins to dissolve and the mixture reaches a boil, check the temperature with a thermometer. Once it hits 125°C, remove from heat and set aside to cool.
3 Meanwhile, in a separate saucepan, combine the cornstarch and gelatin powder. Gradually add 125g of water, whisking continuously to avoid lumps.
4 Place the pan over low heat, stirring with a whisk to incorporate the mixture thoroughly. Continue to stir until it thickens slightly.
5 Add the colored food coloring to the mixture and blend well, ensuring the color is even. Allow the mixture to cool slightly—make sure it’s not too hot to avoid melting the popcorn.
6 Once the popcorn has cooled, sprinkle it with a pinch of salt and pour the colored syrup over it, mixing gently to coat all the popcorn.
7 Spread the popcorn mixture evenly on a baking tray lined with parchment paper. Place the tray in the fridge and chill for at least 20-30 minutes.
