Title: Steamed Mackerel with Basil Pepes, Delicious and Flavorful

Ingredients:

  • 1/2 kg mackerel, cleaned and gutted
  • 6 banana leaves
  • A handful of basil leaves
  • Petai (stink beans), as desired
  • Lemongrass
  • Bay leaves
  • Lime

Spice Paste:

  • 10 shallots
  • 10 garlic cloves
  • 2 segments of turmeric
  • 10 candlenuts
  • 25 bird’s eye chilies, adjust to taste
  • Salt, to taste
  • Sugar, to taste

Steps:

  1. Clean the mackerel thoroughly and rub with lime juice to remove any fishy odor.
  2. Grind all the spice paste ingredients into a smooth paste.
  3. Wipe the banana leaves clean and arrange them for wrapping the fish.
  4. Place the mackerel on the banana leaves and spread the spice paste evenly over the fish. Add lemongrass, bay leaves, basil leaves, and petai for a visually appealing presentation.
  5. Steam in a steamer for approximately one hour or until the fish is cooked through and tender.
  6. Serve hot with steamed rice.
