Simple Botok Ayam Recipe
Ingredients:
- 200 grams chicken, diced into small cubes
- Sliced Spice Mix:
- 4 shallots
- 2 cloves garlic
- 5 bird’s eye chilies (adjust to taste)
- 2 tomatoes
- 1 stalk lemongrass
- A handful of basil leaves
- 5 tablespoons coconut milk
- Sugar and MSG (or seasoning) to taste
- Banana leaves for wrapping
Instructions:
- In a large bowl, combine the diced chicken with the sliced spice mix, ensuring the chicken is well coated with all the flavors.
- Place a portion of the chicken mixture onto a piece of banana leaf. Fold the leaf to create a secure packet, sealing the edges.
- Arrange the packets in a steamer. Steam over boiling water for approximately 25 minutes, or until the chicken is cooked through and tender.
- Once done, carefully open the banana leaf packets and serve the botok ayam hot.
