Ingredients:

  • 1/2 cup brown rice
  • 1/2 cup barley
  • 1/2 cup dried lentils
  • 4 3/4 cups water
  • 1/2 cup diced carrot
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper (optional)
  • 1 1/4 tsp garlic powder
  • 1/2 tsp paprika (optional)
  • 3/4 tsp salt

Instructions:

  1. Combine all ingredients in a heavy pan over medium heat.

  2. Bring to a boil and then reduce heat to low.

  3. Simmer uncovered for approximately 50 minutes, or until all liquid is absorbed and the mixture becomes very sticky. Ensure to stir periodically throughout the cooking process and more frequently towards the end to prevent scorching. If the mixture doesn’t seem sticky enough, add a little more water and continue simmering.

  4. Remove from heat and transfer to a covered container. Chill thoroughly, preferably overnight.

  5. To cook the burgers: Preheat a skillet over medium heat and lightly spray with non-stick spray if desired.

  6. Wet your hands lightly and shape patties from approximately 1/2 cup of the chilled mixture each.
