Spicy Long Bean Stir-Fry with Eggs
Ingredients:
- 10 long beans, thinly sliced
- 2 large eggs
- 3 cloves garlic, finely chopped
- 2 shallots, finely chopped
- 1 onion, thinly sliced
- Bird’s eye chilies, to taste (adjust according to your preferred spice level)
- Salt, to taste
- Seasoning, to taste
- Sweet soy sauce (optional)
Instructions:

Begin by preparing the long beans. Slice them thinly to ensure they cook evenly and retain a slight crunch.

Finely chop the garlic, shallots, and onion. If you like it spicy, chop the bird’s eye chilies to your preferred level of heat.

Heat a generous amount of cooking oil in a pan over medium heat. Once hot, add the chopped garlic, shallots, onion, and bird’s eye chilies. Sauté until fragrant and the aromatics are golden brown.

Season with salt, seasoning, and a splash of sweet soy sauce if desired. Stir well to combine and allow the flavors to meld.

Crack the eggs into the pan and stir them gently, breaking them up as they cook. Let them scramble until they are just set.

Add the sliced long beans to the pan. Stir-fry everything together until the beans are tender yet crisp, and everything is well combined. The beans should still retain some of their crunch for added texture.
