Ingredients:

  • 1 lemon juice
  • 2 ripe bananas
  • 1 package pectin
  • 2 cups white sugar

Instructions:

4 Bring the mixture to a full rolling boil over high heat, stirring constantly; then stir in the remaining sugar.
5 Cook, stirring continuously, until the fruit mix is in a full rolling boil that cannot be stirred down.
6 Boil, stirring, for one minute.
7 Remove from heat.
8 Using a metal spoon, stir and skim off foam for 5 minutes.
9 Pour the jam into five 1-cup canning jars, leaving 1/4 inch headspace.
10 Seal the jars with prepared discs and bands.
11 Process in a boiling water bath for 10 minutes.
12 Let the jam cool before storing or serving.
