Instructions

  1. Prepare the Date Filling:
    Start by removing the seeds from the dates and finely chop them. Combine the chopped dates with chopped cashew nuts, ginger, and green chillies in a bowl. Add salt to taste and set the mixture aside.

  2. Cook the Raw Bananas:
    Place the raw bananas in a pot of boiling water. Let them cook for about 15 minutes. Once done, allow the bananas to cool completely. Peel the skin off the bananas and grate them into a plate. Set the grated bananas aside.

  3. Prepare the Spices and Aromatics:
    In a pan, heat 1 teaspoon of ghee over low heat. Once the ghee is warm, add cumin seeds. When the seeds crackle, add finely chopped green chillies, ginger, and onion. Sauté the mixture until the onions turn golden brown.

  4. Combine the Ingredients:
    To the pan, add the grated bananas, salt, red chilli powder, dry mango powder (amchur), lemon juice, gram flour (besan), clove powder, cinnamon powder, and cardamom powder. Stir the mixture well, ensuring that all ingredients are combined. Let the mixture cook for a few more minutes, then turn off the heat and set it aside to cool.

  5. Prepare the Tikki Mixture:
    Once the raw banana mixture has cooled down, add chopped coriander leaves and mix everything thoroughly.

  6. Form the Tikkis:
    Divide the banana mixture into equal portions. Take a portion of the mixture in your palm and shape it into a flat, circular patty. Create a small cavity in the center of each patty and fill it with the date filling. Seal the edges of the tikki to encase the filling.

  7. Shallow Fry the Tikkis:
    Heat 1 tablespoon of ghee in a skillet over low to medium heat. Place the prepared stuffed tikkis on the skillet and shallow fry them until they are golden brown and crisp on both sides. Each tikki will take around 8 to 10 minutes to fry properly.

  8. Serving Suggestions:
