Looking for a healthy and delicious dessert? Try these sugar-free mini plumcakes, packed with the natural sweetness of dates and apples. Perfect for those who want to enjoy a wholesome dessert without any added sugar. This easy-to-make recipe combines the freshness of fruit with a rich, moist texture, creating a dessert that’s as nourishing as it is satisfying. It’s ideal for anyone looking to enjoy a sweet treat that’s both indulgent and nutritious.

Ingredients:

Ingredient Quantity
Dates 90g
Stark Apples 260g
All-purpose Flour (00) 160g
Oranges 2
Seed Oil (e.g., sunflower) 90g
Whole Milk 60g
Raisins 10g
Eggs 55g
Baking Powder 8g
Fine Salt A pinch
Additional Seed Oil As needed
Extra All-purpose Flour As needed

Instructions:

Step 1: Prepare the Apples and Oranges

Begin by washing the apples thoroughly. Set aside one apple, keeping it wrapped in plastic wrap for the final decoration. Peel and slice the remaining apples into thin slices (about 3mm thick). For the oranges, juice them, using 100g of fresh orange juice for the batter.

Step 2: Blend the Fruit Mixture

In a mixing bowl, combine the apple slices with the orange juice. Add the pre-washed raisins, seed oil, whole milk, and grated orange zest. Use an immersion blender to blend the mixture until smooth, creating a creamy fruit base.

Step 3: Mix in Wet Ingredients

Transfer the blended fruit mixture to a large bowl. Add the egg and a pinch of salt. Use electric beaters to mix the ingredients together thoroughly.

Step 4: Combine Dry Ingredients

In a separate bowl, sift together the flour and baking powder. Gradually add the dry ingredients to the wet mixture, continuing to mix with the electric beaters until everything is well combined.

Step 5: Incorporate Apple Slices

Add the remaining apple slices to the batter, folding them gently into the mixture. These apple slices will infuse the batter with extra flavor and moisture.

Step 6: Prepare the Molds and Decorate

Lightly grease your mini plumcake molds with seed oil and dust them with a bit of flour to prevent sticking. Spoon the batter into the molds, filling them evenly. Take the reserved apple, peel it, and cut it into thin slices. Decorate the top of each plumcake with these slices.

Step 7: Bake

Preheat your oven to 180°C (350°F) and bake the mini plumcakes in the static oven for approximately 25 minutes. The cakes should be golden and firm to the touch.

Step 8: Orange Juice Glaze

While the plumcakes are baking, pour the reserved orange juice into a small saucepan and reduce it over medium heat until it thickens into a syrupy glaze.

Step 9: Cool and Glaze

Once the plumcakes are baked, remove them from the oven and let them cool for a few minutes. Carefully remove the plumcakes from the molds and brush the tops with the orange juice reduction to add a shiny finish.
