  • 2 cups sugar
  • 1/2 cup water
  • 2 cups Mochiko (glutinous rice flour)
  • 1 teaspoon katakuriko (potato starch)
  • Koshian (smooth sweetened red bean paste)

Instructions:

  1. Boil Water and Sugar:

    • In a saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring constantly until the sugar is completely dissolved.
  2. Create Mochi Dough:

    • Remove the saucepan from the stove once the sugar has dissolved. Gradually pour in the Mochiko (glutinous rice flour) while stirring vigorously to prevent lumps from forming. Continue stirring until you achieve a smooth dough-like consistency.
