Risoles Rogut Ayam (Super Creamy)

Ingredients

For the Crepes:

  • 150 grams all-purpose flour (preferably Segitiga Biru)
  • 300 milliliters water
  • 1 egg
  • 1 tablespoon butter (I use Wijsman)
  • 1/2 teaspoon salt

For the Filling:

  • 250 grams minced chicken
  • 1 carrot, diced
  • 3 tablespoons all-purpose flour
  • 1/2 onion, finely chopped
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 2 tablespoons butter for sautéing

For the Coating:

  • 2 eggs, lightly beaten
  • Fine breadcrumbs, as needed

Instructions

Preparing the Crepes:

  1. In a mixing bowl, combine all the crepe ingredients: flour, water, egg, butter, and salt. Stir until the batter is smooth and free of lumps.
  2. Heat a non-stick skillet over low heat. Pour a ladleful of the batter into the skillet, swirling to cover the bottom in a thin layer.
  3. Cook until the crepe is set and slightly golden on the edges. Remove and repeat until all the batter is used.

Making the Filling:

  1. In a large skillet, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent.
  2. Add the minced chicken and diced carrot to the skillet. Cook until the chicken changes color and the carrots soften.
  3. Sprinkle the flour over the mixture, stirring continuously until it forms a crumbly texture.
  4. Gradually add a little water while stirring until the mixture forms a thick, creamy sauce. Season with ground nutmeg, sugar, salt, and pepper to taste. Cook until the filling thickens, then remove from heat.

Assembling the Risoles:

  1. Place a crepe on a flat surface. Spoon a generous amount of filling onto the center.
  2. Fold the crepe over the filling, tucking in the sides, and roll it up to form a neat parcel.
  3. Dip each rolled crepe into the beaten eggs, then coat evenly with fine breadcrumbs.

Frying the Risoles:

  1. Heat oil in a deep pan over medium heat.
  2. Fry the coated risoles in the hot oil until they turn golden brown and crispy.
  3. Remove and drain on paper towels to remove excess oil.
