Tahu Udang Tauco: A Flavorful Indonesian Shrimp and Tofu Delight

Ingredients:

  • 500 grams shrimp, peeled, leaving the tails intact, and cleaned thoroughly
  • 400 grams firm tofu, cut into cubes and half-fried
  • Spice Paste:
    • 3 shallots
    • 2 garlic cloves
    • 2 candlenuts
  • Additional Ingredients:
    • 4 tablespoons tauco (fermented soybeans)
    • 2 tablespoons sweet soy sauce (kecap manis)
    • Salt, to taste
    • 200 ml water
    • Optional: additional seasonings such as chicken bouillon powder

Instructions:

  1. Prepare the Spice Paste:

    • Begin by making the spice paste. Blend the shallots, garlic cloves, and candlenuts into a smooth paste using a food processor or mortar and pestle.
  2. Cook the Spice Paste:

    • Heat a bit of oil in a pan over medium heat. Add the spice paste and sauté until it becomes fragrant and turns a light brown color.
  3. Add Shrimp and Tofu:

    • Add the cleaned shrimp and tofu cubes to the pan. Stir well to coat them with the aromatic spice paste.
  4. Incorporate Tauco:

    • Stir in the tauco, ensuring that it is evenly distributed throughout the mixture.
  5. Add Liquid and Seasonings:

    • Pour in the water and sweet soy sauce. Mix thoroughly and let it cook. Taste the dish and adjust the seasoning with salt if necessary. You may also add chicken bouillon powder for extra flavor if desired.
  6. Simmer and Adjust Consistency:

    • Allow the mixture to simmer until the water reduces to your preferred consistency. You can choose to make it thicker or leave it slightly saucy according to your preference. For a richer taste, consider substituting part of the water with coconut milk.
  7. Optional Additions:

    • Feel free to enhance the dish by adding other ingredients such as tempeh, chicken, or vegetables like carrots.
