Tahu Tempe Bacem Recipe

Ingredients:

  • 1 block of firm tofu
  • 1 block of tempeh
  • 5 bay leaves
  • 1 stalk of lemongrass
  • Palm sugar, to taste
  • Sweet soy sauce, to taste
  • Salt, to taste
  • Spice paste:
    • 1 tablespoon coriander seeds
    • 5 shallots
    • 2 cloves garlic

Instructions:

  1. Prepare the Spice Paste: Begin by grinding the coriander seeds, shallots, and garlic into a smooth paste using a mortar and pestle or a food processor.

  2. Arrange the Ingredients: Lay the bay leaves at the bottom of a large pot. Place the tofu and tempeh on top of the bay leaves. Sprinkle the spice paste over the tofu and tempeh.

  3. Add Flavorings: Add palm sugar and sweet soy sauce to taste. Season with salt as needed. Pour in enough water to submerge the tofu and tempeh completely.

  4. Cook: Bring the pot to a boil over medium heat, then reduce the heat and simmer until most of the water has evaporated and the tofu and tempeh are well-infused with the flavors, about 45 minutes to 1 hour.

  5. Finish and Serve: Once the water has almost completely reduced, remove the tofu and tempeh from the pot. For a crispy texture, you can either deep-fry or grill them until golden brown. If grilling, simply place them on a grill and cook until they develop a crispy exterior.

  6. Optional Note: If you prefer a less oily preparation, grilling works well, especially if you are out of cooking oil.

Enjoy your homemade Tahu Tempe Bacem, a traditional Indonesian dish full of rich, savory flavors!
