Tempe & Tahu Bacem: A Delightful Indonesian Dish

This traditional Indonesian recipe, Tempe & Tahu Bacem, combines the earthy flavors of tempeh and tofu with a rich, sweet-spicy marinade. The result is a savory, caramelized dish that makes an excellent accompaniment to a variety of meals.

Ingredients:

  • 1 block of tempeh, sliced
  • 6 pieces of tofu, sliced
  • 1/2 liter of water
  • 2 bay leaves
  • 5 tablespoons of sweet soy sauce (kecap manis)
  • 5 tablespoons of palm sugar, finely shaved
  • Salt, to taste
  • Pepper, to taste

For the Spice Paste:

  • 5 shallots
  • 3 cloves of garlic
  • 1/2 teaspoon of coriander seeds
  • Cooking oil, as needed for frying

Instructions:

  1. Prepare the Spice Paste:

    • In a blender or food processor, combine the shallots, garlic, and coriander seeds. Blend until you achieve a smooth paste. Set aside.
  2. Cook the Tempeh and Tofu:

    • Heat a large pot or wok over medium heat. Add the spice paste to the pot, cooking it until fragrant and the oil starts to separate from the paste.
    • Pour in the water, then add the bay leaves, sweet soy sauce, and palm sugar. Stir well to combine.
    • Gently add the sliced tempeh and tofu to the pot, ensuring they are fully submerged in the liquid. Season with salt and pepper to taste.
    • Allow the mixture to simmer gently, uncovered, for about 30 minutes or until the liquid has reduced and the tempeh and tofu are well-coated with the sauce. Stir occasionally to ensure even cooking and prevent sticking.
  3. Fry the Tempeh and Tofu:

    • Once the tempeh and tofu have absorbed the flavors and the liquid has mostly evaporated, remove them from the pot.
    • Heat oil in a frying pan over medium heat. Fry the tempeh and tofu in batches until golden brown and crispy on the outside.
    • Remove from the oil and drain on paper towels.
  4. Serve:

    • Arrange the fried tempeh and tofu on a serving platter. Serve warm as a delicious side dish or main course.
