Sweet and Savory Tofu with Bok Choy and Bell Peppers

Pokcoy Tahu Manis: A Delightful Sweet and Savory Dish
Ingredients:
- 2 bunches of pokcoy (bok choy), separated into individual leaves
- 5 pieces of tofu, diced
- A handful of dried black mushrooms, soaked and sliced
- 1/2 green bell pepper, diced
- 1/2 red bell pepper, diced
- 1/2 yellow bell pepper, diced
- 3 cloves garlic, minced
- 3 bird’s eye chilies, sliced
- 1 tablespoon oyster sauce
- 1 tablespoon sweet soy sauce
- 200 ml water
- Salt, to taste
- Sugar, to taste
- Ground black pepper, to taste
- 1 tablespoon cornstarch, dissolved in a little water
- Cooking oil
Instructions:
- 
Prepare the Pokcoy: - Bring a pot of water to a boil. Briefly blanch the pokcoy in the boiling water for a short period until just tender. Drain and arrange the leaves neatly on a serving plate.
 
- 
Fry the Tofu: - Heat a generous amount of cooking oil in a skillet over medium heat. Fry the diced tofu until golden brown and crispy on all sides. Remove from the skillet and set aside.
 
- 
Sauté the Aromatics and Vegetables: - In the same skillet, add a bit more oil if necessary and sauté the minced garlic and sliced bird’s eye chilies until fragrant.
- Add the diced bell peppers and sliced mushrooms to the skillet, stirring until the peppers are slightly softened.
 
- 
Combine Flavors: - Return the fried tofu to the skillet and mix well with the vegetables.
- Stir in the oyster sauce and sweet soy sauce. Pour in the water and bring the mixture to a boil. Allow it to simmer until the sauce has reduced slightly.
 
- 
Thicken the Sauce: - Gradually stir in the cornstarch slurry and continue to cook until the sauce has thickened to your desired consistency.
- Season with salt, sugar, and ground black pepper to taste. Adjust the seasoning as needed.

Serve: - Spoon the flavorful tofu and vegetable mixture over the prepared pokcoy. Serve hot and enjoy!
