  • Ground black pepper, to taste
  • 1 tablespoon cornstarch, dissolved in a little water

  1. Prepare the Pokcoy:

    • Bring a pot of water to a boil. Briefly blanch the pokcoy in the boiling water for a short period until just tender. Drain and arrange the leaves neatly on a serving plate.
  2. Fry the Tofu:

    • Heat a generous amount of cooking oil in a skillet over medium heat. Fry the diced tofu until golden brown and crispy on all sides. Remove from the skillet and set aside.

  4. Combine Flavors:

    • Return the fried tofu to the skillet and mix well with the vegetables.
    • Stir in the oyster sauce and sweet soy sauce. Pour in the water and bring the mixture to a boil. Allow it to simmer until the sauce has reduced slightly.
  5. Thicken the Sauce:

    • Gradually stir in the cornstarch slurry and continue to cook until the sauce has thickened to your desired consistency.
    • Season with salt, sugar, and ground black pepper to taste. Adjust the seasoning as needed.
  6. Serve:
