Sweet and Savory Tuna Semur with Crispy Shallots

Tuna Semur Recipe

Ingredients:

  • 5 pieces of tuna fillet
  • For the Spice Paste:
    • 2 candlenuts
    • 2 shallots
    • 2 cloves of garlic
    • Ground black pepper, to taste
  • 4 tablespoons sweet soy sauce
  • Salt, sugar, and seasoning powder, to taste
  • Water, as needed
  • Oil, for sautéing
  • Juice of 1 lime
  • Fried shallots, for garnish

Instructions:

  1. Prepare the Tuna:

    • Clean the tuna fillets and marinate them with lime juice and a pinch of salt. Allow them to sit for 30 minutes to remove any fishy odor.
  2. Fry the Tuna:

    • Heat oil in a pan over medium heat and fry the marinated tuna fillets until they are golden brown and cooked through. Set aside.
  3. Make the Spice Paste:

    • Blend the candlenuts, shallots, garlic, and ground black pepper into a smooth paste.
  4. Sauté the Spice Paste:

    • In the same pan, add a bit more oil if needed. Sauté the spice paste until it becomes fragrant and slightly caramelized.
  5. Cook the Semur:

    • Add bay leaves and lemongrass to the pan with the sautéed spice paste. Stir briefly to release their flavors.
    • Pour in water and sweet soy sauce, mixing well.
    • Add the fried tuna fillets to the pan. Let it simmer until the sauce thickens and the tuna is well coated, about 10-15 minutes.
  6. Season to Taste:

    • Adjust the flavor with salt, sugar, and seasoning powder as needed. Taste and adjust accordingly.
  7. Finish and Serve:

    • Once the sauce has reduced and the flavors have melded together, remove the pan from heat.
    • Transfer the Tuna Semur to a serving dish and garnish with fried shallots on top.
