Tuna Semur Recipe
Ingredients:
- 5 pieces of tuna fillet
- For the Spice Paste:
- 2 candlenuts
- 2 shallots
- 2 cloves of garlic
- Ground black pepper, to taste
- 4 tablespoons sweet soy sauce
- Salt, sugar, and seasoning powder, to taste
- Water, as needed
- Oil, for sautéing
- Juice of 1 lime
- Fried shallots, for garnish
Instructions:

Prepare the Tuna:
- Clean the tuna fillets and marinate them with lime juice and a pinch of salt. Allow them to sit for 30 minutes to remove any fishy odor.

Fry the Tuna:
- Heat oil in a pan over medium heat and fry the marinated tuna fillets until they are golden brown and cooked through. Set aside.

Make the Spice Paste:
- Blend the candlenuts, shallots, garlic, and ground black pepper into a smooth paste.

Sauté the Spice Paste:
- In the same pan, add a bit more oil if needed. Sauté the spice paste until it becomes fragrant and slightly caramelized.

Cook the Semur:
- Add bay leaves and lemongrass to the pan with the sautéed spice paste. Stir briefly to release their flavors.
- Pour in water and sweet soy sauce, mixing well.
- Add the fried tuna fillets to the pan. Let it simmer until the sauce thickens and the tuna is well coated, about 10-15 minutes.

Season to Taste:
- Adjust the flavor with salt, sugar, and seasoning powder as needed. Taste and adjust accordingly.

Finish and Serve:
- Once the sauce has reduced and the flavors have melded together, remove the pan from heat.
- Transfer the Tuna Semur to a serving dish and garnish with fried shallots on top.
