Spicy Honey Chicken (Ayam Madu Pedas)

Ingredients:

  • 10 pieces of chicken (preferably wings)
  • 1 lemon or lime
  • Marinade:
    • 5 cloves garlic, grated
    • 2 cm ginger, grated
    • 2 tablespoons chili sauce
    • 2 tablespoons sweet soy sauce (kecap manis)
    • 2 tablespoons honey
    • 2 tablespoons oyster sauce
    • 1 tablespoon tomato ketchup
    • A pinch of salt

Instructions:

  1. Prepare the Chicken:

    • Rub the chicken pieces with lemon or lime juice and salt. Let them sit for a few minutes, then rinse thoroughly.
  2. Marinate the Chicken:

    • In a large bowl, combine all the marinade ingredients: garlic, ginger, chili sauce, sweet soy sauce, honey, oyster sauce, tomato ketchup, and salt. Mix well.
    • Add the chicken pieces to the bowl and toss until they are evenly coated with the marinade. Allow the chicken to marinate for 30 minutes.
  3. Cook the Chicken:

    • Place the marinated chicken along with the marinade in a pan. Cook over medium heat, without adding water.
    • Allow the chicken to cook until the marinade has thickened and the liquid has evaporated, leaving a glossy coating on the chicken.
  4. Fry the Chicken:

    • Heat oil in a pan over high heat. Briefly fry the chicken pieces until they are golden brown and crispy.

Tips:

  • Adjusting Spice Levels: If you prefer a spicier kick, you can add chili powder to the marinade.
  • Cooking Time: Thicker chicken pieces will require a longer marination time. This recipe is ideal for chicken wings.
