Spicy Honey Chicken (Ayam Madu Pedas)
Ingredients:
- 10 pieces of chicken (preferably wings)
- 1 lemon or lime
- Marinade:
- 5 cloves garlic, grated
- 2 cm ginger, grated
- 2 tablespoons chili sauce
- 2 tablespoons sweet soy sauce (kecap manis)
- 2 tablespoons honey
- 2 tablespoons oyster sauce
- 1 tablespoon tomato ketchup
- A pinch of salt

Prepare the Chicken:
- Rub the chicken pieces with lemon or lime juice and salt. Let them sit for a few minutes, then rinse thoroughly.

Marinate the Chicken:
- In a large bowl, combine all the marinade ingredients: garlic, ginger, chili sauce, sweet soy sauce, honey, oyster sauce, tomato ketchup, and salt. Mix well.
- Add the chicken pieces to the bowl and toss until they are evenly coated with the marinade. Allow the chicken to marinate for 30 minutes.

- Place the marinated chicken along with the marinade in a pan. Cook over medium heat, without adding water.
- Allow the chicken to cook until the marinade has thickened and the liquid has evaporated, leaving a glossy coating on the chicken.

- Heat oil in a pan over high heat. Briefly fry the chicken pieces until they are golden brown and crispy.
Tips:
- Adjusting Spice Levels: If you prefer a spicier kick, you can add chili powder to the marinade.
- Cooking Time: Thicker chicken pieces will require a longer marination time. This recipe is ideal for chicken wings.
