Sambal Telur Ayam Recipe
Ingredients:
- 1/2 kg eggs (about 6 large eggs)
- 6 large red chilies
- 10 small bird’s eye chilies (cabe rawit)
- A pinch of black pepper
- Salt, to taste
- White sugar, to taste
- Sweet soy sauce (kecap manis), to taste
- 3 cloves garlic
- 6 shallots
- 1 tomato
Instructions:

Begin by boiling the eggs until they are fully cooked. Once done, peel the eggs and lightly fry them until they develop a golden-brown exterior. Set aside.

In a separate pot, bring water to a boil and briefly cook the red chilies, bird’s eye chilies, garlic, shallots, and tomato until they are tender.

After boiling, drain the ingredients and transfer them to a blender or food processor. Add a pinch of black pepper, salt, and blend until smooth.

Heat a bit of oil in a pan over medium heat. Add the blended mixture to the pan and sauté until the aroma is released and the spices are fragrant.

Season the mixture with a touch of sweet soy sauce and a bit of white sugar. Stir well to combine.

Pour in a small amount of water to achieve your desired sauce consistency, then gently add the fried eggs into the pan. Let the mixture simmer until the sauce thickens and the eggs are well-coated.
