Ayam Bakar Pedas Manis (Sweet and Spicy Grilled Chicken)

Ingredients:
- 1 large broiler chicken
Seasoning:
- 5 shallots
- 10 chilies (optional, adjust to taste)
- 1 thumb-sized piece of ginger
- 1 thumb-sized piece of turmeric
- Ground white pepper, to taste
- Coriander, to taste
- 2 kaffir lime leaves
- 3 bay leaves
- 1 stalk lemongrass
- 4 cloves garlic
- Sweet soy sauce, to taste
- Palm sugar, to taste
- Cooking oil, to taste
- Royco seasoning, to taste
- Salt, to taste
- 1 packet Kara coconut milk
Instructions:

Preparation:
- Thinly slice the shallots and kaffir lime leaves.
- Grind the chilies, garlic, pepper, coriander, ginger, and turmeric into a paste.

Cooking:
- Sauté the shallots until fragrant.
- Add the ground spice paste to the sautéed shallots and continue to cook until aromatic.
- Add the lemongrass, kaffir lime leaves, and bay leaves to the pan.
- Pour in the Kara coconut milk and add some water to create a rich sauce.
- Add the chicken pieces to the sauce, season with Royco, pepper, and salt. Stir well.
- Cover and cook until the chicken is tender and the sauce has reduced, checking and adjusting the seasoning as needed.

Grilling:
- Once the chicken is cooked and infused with the flavors, remove it from the sauce.
- Grill the chicken using a charcoal grill, a non-stick pan (teflon), or a stone grill for a more traditional approach. For convenience, you can also use a grill pan.
- Grill the chicken until it is charred and slightly crispy on the outside, basting with the leftover sauce for added flavor.
