Sweet and Spicy Indonesian Omelette with Sauce
Ingredients
For the Omelette:
- 4 large eggs
- 2 stalks of scallions (thinly sliced)
- Salt, to taste
- Bouillon powder, to taste
- Black pepper, to taste
For the Sauce:
- 1 clove garlic (finely chopped)
- 1 medium carrot (cut into matchsticks)
- 2 tablespoons chili sauce
- 3 tablespoons tomato ketchup
- 1/2 to 1 cup water
- Salt, to taste
- Granulated sugar, to taste
- 1 teaspoon oyster sauce
- 1 teaspoon soy sauce
- Cooking oil, for frying

Prepare the Omelette:
- Clean and thinly slice the scallions. In a mixing bowl, beat the eggs until well combined. Add the sliced scallions, salt, black pepper, and bouillon powder to the eggs, mixing thoroughly.
- Heat a non-stick frying pan over medium heat and lightly coat it with cooking oil. Pour the egg mixture into the pan, spreading it evenly. Cook until the omelette is golden brown on both sides and fully cooked through. If you prefer a neater result, use a non-stick skillet. Optionally, you can add thinly sliced cabbage and corned beef to the omelette before folding it.

Prepare the Sauce:
- In a separate pan, heat a small amount of cooking oil over medium heat. Add the chopped garlic and sauté until fragrant. Add the carrot matchsticks and cook until the carrots are slightly tender.
- Stir in the chili sauce, tomato ketchup, and mix well. Gradually add water, a little at a time, until the sauce reaches your desired consistency.
- Season the sauce with salt, granulated sugar, oyster sauce, and soy sauce, adjusting the flavors to your taste.
