Sweet and Spicy Pindang Tuna

Ingredients:

  • 6 pieces of pindang tuna (or skipjack tuna)
  • 10 red chili peppers
  • 5 green chili peppers
  • 5 bird’s eye chilies
  • 10 cloves of garlic
  • 10 cloves of shallots
  • Bay leaves, to taste
  • Salt, to taste
  • Seasoning powder (Masako), to taste
  • Granulated sugar, to taste
  • Cooking oil

Instructions:

  1. Prepare the Tuna: Clean and wash the pindang tuna thoroughly. Heat oil in a frying pan and fry the tuna pieces until golden brown. Set aside.

  2. Prepare the Spices: Slice the red chilies, green chilies, bird’s eye chilies, garlic, and shallots thinly.

  3. Sauté the Spices: In a separate pan, heat some oil and sauté the sliced chilies, garlic, and shallots until they begin to soften and release their aromas.

  4. Add Seasonings: Add the bay leaves, granulated sugar, salt, and seasoning powder (Masako) to the sautéed mixture. Stir well until all the ingredients are well combined and the seasonings are evenly distributed.

  5. Combine with Tuna: Reduce the heat to low and gently add the fried tuna pieces to the pan. Stir to coat the tuna with the spicy and sweet mixture. Allow it to simmer for a few minutes so the flavors meld together.

  6. Serve: Once everything is well combined and the tuna is fully coated with the sauce, remove from heat. Serve hot with steamed rice.
