Triple S Egg and Chicken (Sweet, Sour, Spicy)

Ingredients:

  • 1 chicken breast fillet
  • 1 stalk green onion (spring onion)
  • 3 stalks celery
  • 1 carrot
  • 1/2 cucumber (seedless)
  • 1 large red chili
  • 1 boiled egg (whites only)
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 teaspoon fish sauce or soy sauce
  • Salt, to taste
  • 1 teaspoon ground black pepper
  • 1 tablespoon lime juice or vinegar
  • 2 cloves garlic
  • 1 onion
  • Sesame oil, to taste
  • 3 tablespoons hot chili sauce (sambal)
  • 1 tablespoon tomato sauce

Instructions:

  1. Prepare the Vegetables:

    • Slice the carrot and cucumber into matchstick-sized pieces.
    • Cut the red chili into diagonal slices.
    • Chop the green onion into pieces.
    • Coarsely chop the celery and garlic.
    • Dice the onion.
  2. Marinate the Chicken and Egg:

    • In a mixing bowl, combine sweet soy sauce, a splash of sesame oil, ground black pepper, salt, fish sauce (or soy sauce), lime juice (or vinegar), hot chili sauce, and tomato sauce. Mix well to create the marinade.
    • Peel the boiled egg and set the yolk aside. Dice the egg white and chicken breast into bite-sized pieces.
    • Add the diced chicken and egg whites to the marinade. Let it sit for about 5 minutes to absorb the flavors.
  3. Cook the Dish:

    • Heat a non-stick skillet over medium heat and add a splash of sesame oil.
    • Sauté the garlic until fragrant.
    • Add the sliced carrot and cook until it’s halfway tender.
    • Introduce the celery, green onion, and red chili to the skillet. Stir well to combine.
    • Add the marinated chicken and egg whites to the skillet. Stir continuously until the chicken is fully cooked and the flavors meld together, and everything is well combined.
  4. Serve:

    • Once cooked, transfer the dish to a serving plate and enjoy the delicious combination of sweet, sour, and spicy flavors.
