Instructions:

  1. Prepare the Yogurt Base:
    In a mixing bowl, whisk the curd (yogurt) until smooth and creamy. Add salt to taste. Gradually add water to achieve your desired consistency, then set the bowl aside.

  2. Cook the Spices:
    Heat the sunflower oil in a small pan over medium heat. Once the oil is hot, add the cumin seeds. Let them sizzle for a few seconds, releasing their fragrance. Add the finely chopped green chili and thinly sliced onion to the pan. Sauté until the onions become soft and translucent, allowing their flavors to meld together.

  3. Add the Corn:
    Once the onions are cooked, add the boiled sweet corn to the pan. Sprinkle in the red chili powder and adjust salt to taste. Stir well to combine and cook for another minute to allow the spices to infuse into the corn. Turn off the heat and let the mixture cool for a few minutes.

  4. Combine with Yogurt:
    Add the cooled corn and onion mixture to the whisked yogurt. Stir gently to ensure that all the ingredients are well combined. Garnish with freshly chopped coriander leaves for a burst of color and flavor.

  5. Serve:
