Instructions:

  1. Prepare the Jaggery Syrup:
    Start by heating the jaggery with ΒΌ cup of water in a saucepan. Stir the mixture until the jaggery dissolves completely and forms a syrup. Set it aside to cool slightly.

  2. Mash the Bananas:
    In a mixing bowl, mash the ripe bananas thoroughly until smooth. This forms the base of the batter.

  3. Make the Batter:
    Add the rice flour, maida, dry ginger powder, cardamom powder, ground cashews, and a pinch of salt to the mashed bananas. Then, pour in the jaggery syrup and mix everything well. Gradually add about 1 cup of water to achieve a thick, smooth pancake batter consistency.

  4. Cook the Dosas:
    Heat a non-stick pan or griddle over medium heat and lightly grease it with ghee. Once the pan is hot, pour a ladleful of the batter onto the pan, spreading it gently into a small circle. Let it cook for about 2 minutes on one side until golden brown. Flip it over and cook the other side for another 2 minutes until both sides are crispy and golden.

  5. Serve:
    Once all the dosas are cooked, serve them hot as a snack. For an extra refreshing touch, pair the Kerala Style Banana Dosa with a glass of buttermilk or Mango Lassi, a sweet, yogurt-based mango drink.
