Grilled Beef Ribs & Honey-Roasted Chicken
Ingredients:
- 1/2 kg beef ribs
- 1/2 chicken (cut into 4 pieces, preferably the thigh portion)
- 1 sachet honey (Madurasa preferred)
- Sweet soy sauce (Kecap manis)
- 2 tablespoons margarine
- 1/2 tablespoon coriander seeds
- 2 shallots
- 3 cloves garlic
- 1/2 small onion
- 1/2 nutmeg
- 1 cm ginger
- 1 bay leaf
- 2 kaffir lime leaves
- Salt to taste
- 1 packet ground pepper
- For basting:
- 3 tablespoons sweet soy sauce
- 2 tablespoons honey
- 3 tablespoons cooking oil

Preparation:
- Clean the beef ribs and chicken pieces thoroughly.

Pre-cooking:
- Boil the beef ribs in a regular pot for a short time to remove any blood. Then, cook the beef ribs in a pressure cooker for 15 minutes. Note that the chicken does not need to be pressure-cooked as it may become too tender and fall apart.

Making the Spice Paste:
- Grind all the spice paste ingredients: coriander seeds, shallots, garlic, onion, nutmeg, and ginger into a fine paste.
- Slice the onion.

Cooking:
- In a pan, heat margarine and sauté the ground spice paste along with the sliced onion, bay leaf, and kaffir lime leaves until fragrant.
- Once the beef ribs are pressure-cooked and the steam has dissipated, open the lid and pour approximately 500 ml of the beef broth into the spice mixture.

Simmering:
- Taste the mixture and adjust seasoning as needed.
- Add the chicken pieces to the pot first, allowing them to cook until they are about half tender. This helps prevent the beef ribs from falling off the bone.

Adding Flavor:
- Pour in 2 tablespoons of honey and sweet soy sauce to taste. Stir well.
- Finally, add the beef ribs to the pot. Continue to simmer and stir occasionally.

Basting and Grilling:
- Once the liquid has reduced, transfer the beef ribs and chicken to another container.
- Prepare the basting mixture by combining 3 tablespoons of sweet soy sauce, 2 tablespoons of honey, and 3 tablespoons of cooking oil. Brush this mixture onto the beef ribs and chicken.

Grilling:
- Preheat the grill. Arrange the beef ribs and chicken on the grill and cook, turning occasionally to avoid burning, until they reach your desired level of doneness.

Serving:
