Sate Sapi Goreng (Bubu Style) Recipe
Ingredients:
- 500 grams beef, cut into cubes
- 1 liter water
- For the spice paste:
- 10 shallots, thinly sliced and fried
- 2 cloves garlic
- 1/2 tablespoon toasted cumin seeds
- 1/2 teaspoon toasted coriander seeds
- A pinch of black pepper
- 1/2 teaspoon salt
- For the other seasonings:
- 2 tablespoons palm sugar, finely sliced
- 4-5 tablespoons sweet soy sauce (adjust to taste)
- 1 tablespoon tamarind water
- 2 handfuls roasted peanuts, coarsely ground

Marinate the Beef:
- Combine the spice paste ingredients with the beef cubes. Marinate for at least 30 minutes, but for the best flavor, refrigerate overnight.

Cook the Beef:
- Heat a pan and add the marinated beef along with any remaining spice paste. Cook until the beef releases its juices.
- Pour in 1 liter of water and bring to a boil. Once boiling, reduce the heat and let it simmer until the beef is tender.

- Add the sweet soy sauce, tamarind water, and palm sugar to the pan. Stir well to combine all the ingredients.
- Continue cooking until the liquid reduces and thickens, allowing the beef to absorb the flavors.

- If the liquid has reduced and the beef is still not tender, add a bit more water and continue cooking. Once the beef is tender and the sauce has thickened, stir in the coarsely ground peanuts.
