Ingredients:
- 1/2 kg beef tongue (cut into 2 pieces)
- 4 shallots
- 3 cloves garlic
- Candlenuts
- Ground coriander (preferably from Desaku)
- 7 red curly chilies
- 1 tomato
- Ground pepper
- Sweet soy sauce (kecap manis)
- Salt
- Sugar
- Beef stock seasoning (Royco beef flavor)
- Water

Prepare the Beef Tongue: Begin by boiling the beef tongue until tender and the white skin peels off easily. Once tender, drain the tongue and carefully remove the white skin. Rinse the tongue again, then cut it into bite-sized pieces according to your preference.

Prepare the Spice Paste: Blend or grind the shallots, garlic, chilies, and candlenuts into a smooth paste.

Cook the Paste: Heat some oil in a pan and sauté the spice paste until fragrant. Add the ground coriander and pepper to the paste and cook for a few more minutes to combine the flavors.

Add the Beef Tongue: Incorporate the cut beef tongue into the pan with the spice paste. Pour in a little water to help create a sauce. Stir in the sweet soy sauce, salt, sugar, and beef stock seasoning. Mix everything thoroughly.

Simmer: Allow the mixture to simmer until the liquid reduces slightly and the flavors meld together.

Add Tomatoes: Slice the tomato and add it to the pan. Cook for a few more minutes until the tomato is softened.
