Semur Kentang, Tahu, & Telur Puyuh Recipe

Ingredients:

  • 500 grams potatoes (peeled, cubed, and deep-fried until golden)
  • 7 pieces of tofu (cubed and deep-fried until golden)
  • 15 quail eggs (boiled and peeled)
  • 2 tablespoons cooking oil

Spice Paste:

  • 5 shallots
  • 3 cloves garlic
  • 1 teaspoon ground black pepper
  • 2 teaspoons salt

Additional Seasonings:

  • 1 tablespoon granulated sugar
  • 5 tablespoons sweet soy sauce (kecap manis)
  • 2 cm cinnamon stick

Instructions:

  1. Prepare the Spice Paste: In a blender or food processor, blend the shallots, garlic, ground black pepper, and salt until smooth.

  2. Sauté the Spice Paste: Heat the cooking oil in a large pan over medium heat. Add the spice paste and sauté until fragrant and golden brown.

  3. Add Sweet Soy Sauce and Sugar: Stir in the sweet soy sauce and granulated sugar. Continue to cook until the sugar has dissolved and the sauce starts to caramelize.

  4. Simmer the Sauce: Pour in approximately 3 cups of water, stirring to combine. Bring the mixture to a boil.

  5. Incorporate the Ingredients: Once boiling, gently add the fried potatoes, fried tofu, and boiled quail eggs. Stir to ensure the ingredients are evenly coated with the sauce.

  6. Cook Until Heated Through: Reduce the heat and let the dish simmer until the sauce is slightly thickened and the ingredients are heated through.

  7. Adjust the Flavor: Taste the sauce and adjust seasoning if needed.
