Simple Semur Telor (Indonesian Sweet Soy Sauce Eggs)

Ingredients:

  • 7 large eggs
  • 1 red chili, sliced diagonally
  • 1/2 tablespoon brown sugar
  • Water, as needed
  • Salt, to taste
  • Sweet soy sauce, to taste
  • For the Spice Paste:
    • 6 shallots
    • 3 garlic cloves
    • 2 candlenuts
    • 1/4 teaspoon black pepper

Instructions:

  1. Prepare the Eggs:

    • You can either fry the eggs or boil them according to your preference. For fried eggs, heat a small amount of oil in a skillet and fry each egg until the whites are set and the edges are crispy. For boiled eggs, cook the eggs in boiling water until they are hard-boiled, then peel and set aside.

    • Blend the shallots, garlic cloves, candlenuts, and black pepper into a smooth paste using a food processor or mortar and pestle.

    • Allow the mixture to simmer until the sauce slightly reduces and thickens. Adjust the seasoning to your taste, adding more salt or sweet soy sauce if needed.
  6. Serve:

    • Once the sauce has thickened and the flavors have melded, remove from heat. Serve the eggs hot, garnished with additional sliced chili if desired.
