Stir-Fried Mustard Greens with Omelette (Tumis Sawi Telur Dadar)

Ingredients:

  • 200 grams of bean sprouts
  • 3 red chili peppers (sliced)
  • 2 large eggs
  • 1 stalk of green onion (sliced)
  • 3 shallots (sliced)
  • 2 cloves of garlic (sliced)
  • 2 tablespoons cooking oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons sweet soy sauce

Instructions:

  1. Prepare the Ingredients: Begin by thoroughly washing the mustard greens and other vegetables. Slice the green onion, red chili peppers, shallots, and garlic, and set them aside.

  2. Cook the Omelette: In a bowl, whisk the eggs with 1/4 teaspoon of salt until well combined. Heat 2 tablespoons of cooking oil in a pan over medium heat. Pour the egg mixture into the pan and cook until set, forming a soft omelette. Remove from the pan and slice into strips.

  3. Sauté Aromatics: In the same pan, add a little more oil if necessary. Sauté the sliced shallots until fragrant, then add the sliced garlic and continue to sauté until both are aromatic and golden.
