Semur Tahu and Eggs

This delightful Semur Tahu and Eggs recipe features tofu and hard-boiled eggs simmered in a rich, aromatic sauce. The combination of spices and seasonings creates a dish full of deep, savory flavors. Here’s how to prepare it:

Ingredients:

  • 4 hard-boiled eggs
  • 2 blocks of tofu, cut into quarters
  • 1 large onion
  • 3 shallots
  • 1 clove garlic
  • 3 candlenuts
  • 1 teaspoon coriander
  • 1 thumb-sized piece of grilled ginger
  • Salt to taste
  • Sugar to taste
  • Sweet soy sauce to taste
  • 1 stalk galangal
  • 2 bay leaves

Instructions:

  1. Prepare the Spice Paste: Begin by finely grinding the shallots, garlic, coriander, and candlenuts into a smooth paste. This can be done using a mortar and pestle or a food processor.

  2. Sauté the Aromatics: Heat a generous amount of oil in a pan over medium heat. Add the spice paste and sauté until fragrant and it changes color. Incorporate the sliced onion and continue to cook until the onion softens and becomes translucent.

  3. Add Additional Flavors: Introduce the grilled ginger (crushed) into the pan, along with a cup of water. Season the mixture with a pinch of salt, sugar, and sweet soy sauce to your taste. Toss in the galangal and bay leaves.

  4. Simmer the Tofu and Eggs: Gently add the hard-boiled eggs and tofu to the pan. Allow the mixture to simmer until the sauce reduces and thickens slightly, and the tofu absorbs the flavors. Stir occasionally to prevent sticking and ensure even cooking.

  5. Adjust Seasonings: Taste and adjust the seasoning if needed, adding more salt, sugar, or sweet soy sauce as per your preference.

  6. Serve: Once the sauce has reduced to your desired consistency and the tofu and eggs are well-coated, remove the bay leaves and galangal. Serve the Semur Tahu and Eggs hot, garnished with fresh herbs if desired.
