Ingredients:

- 4 green chillies – finely chopped

- 6 cashews – chopped
- 1 teaspoon gram flour
- 1/4 teaspoon turmeric powder
- Salt – to taste
- 4 sprigs coriander leaves – finely chopped
For tempering:
- 2 teaspoons sesame oil
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon gram dal
- 1 sprig curry leaves

Prepare the tempering:
Heat sesame oil in a pan. Add mustard seeds, gram dal, and curry leaves. Sauté for 20 seconds. -
Cook the aromatics:
Add grated ginger, garlic, chopped green chillies, and cashews to the pan. Cook for 1 minute until the cashews turn slightly golden. -
Sauté the onions:
Add the thinly sliced onion, turmeric powder, and salt. Cook until the onions become soft and translucent. -
Add water and gram flour mixture:
Pour 1/2 cup water into the pan and stir to combine. In a small bowl, mix gram flour with 1/4 cup water and pour it into the pan. Let it cook for 5 minutes to thicken the mixture. -
Add potatoes:
Add the boiled and mashed potatoes to the pan. Stir well and cook for another 8 minutes to let the flavors meld together. -
Garnish and serve:
Turn off the heat and garnish with freshly chopped coriander leaves.
