Sayur Goreng Asem Iga Sapi (Sour Vegetable Soup with Beef Ribs)

Ingredients:

  • Beef Ribs (Iga Sapi): Adjust the quantity as per your preference. Beef shank (tetelan) is an excellent choice for added flavor.
  • Assorted Sour Vegetables: A package of mixed sour vegetables.
  • Sweet Corn: 1 ear, optional (added upon request from a family member 😅).

Spice Paste (Bumbu Halus):

  • Garlic: 2 cloves
  • Shallots: 5 cloves
  • Candlenuts: 2 nuts
  • Coriander Seeds: To taste
  • Turmeric: A small piece
  • Ginger: 1/2 segment
  • Red Chilies: 3, or more if you prefer a spicier dish

Additional Seasonings (Bumbu Cemplung):

  • Bay Leaves: 2
  • Lemongrass: 1 stalk, bruised
  • Galangal: 1 piece, bruised

Preparation Steps:

  1. Boil the Beef Ribs: Start by boiling the beef ribs or shank pieces until tender. Once cooked, set them aside.

  2. Prepare the Vegetables: In a separate pot, bring water to a boil. Begin by cooking the harder vegetables first, such as sweet corn, young jackfruit, pumpkin, tamarind, young papaya, peanuts, and melinjo seeds.

  3. Sauté the Spice Paste and Seasonings: While the vegetables are cooking, heat oil in a separate pan and sauté the spice paste (bumbu halus) along with the additional seasonings (bumbu cemplung) until fragrant and well-cooked.

  4. Combine Everything: Add the sautéed spices and seasonings into the pot of boiling vegetables, along with the pre-cooked beef ribs or shank pieces. Continue cooking until the vegetables are almost done.

  5. Final Touches: When the vegetables are nearly cooked through, add melinjo leaves and long beans. Season the soup with sugar and salt to taste. For added convenience, you can also use pre-made sour vegetable seasoning.

  6. Finish Cooking: Allow everything to simmer until fully cooked. Turn off the heat and your Sayur Goreng Asem is ready to serve.
