Asam Pedas Patin Bumbu Kuning

Ingredients:

  • 1 whole fresh patin fish, cut into 6 pieces
  • 1 lime
  • 2 stalks lemongrass, smashed
  • 2 cm galangal, smashed
  • 2 bay leaves
  • 3 kaffir lime leaves
  • 150 grams okra, cut in half
  • 2 carrots, thickly sliced
  • 1 spring onion, sliced
  • 3 sprigs of Thai basil, leaves separated
  • 1 tomato, quartered
  • 10 bilimbi (cucumber tree fruit), sliced
  • 5 red chilies, sliced
  • For the spice paste:
    • 2 cm turmeric
    • 3 cm ginger
    • 8 shallots
    • 6 garlic cloves
    • 3 candlenuts
    • 3 teaspoons coriander seeds
    • Salt, sugar, and seasoning to taste
  • Oil for sautéing
  • Water as needed

Instructions:

  1. Prepare the Fish: Clean the fish thoroughly, ensuring all internal organs are removed. Wash away any slime by rubbing the fish with lime juice and salt. Let it sit for 15 minutes to remove excess odor.

  2. Make the Spice Paste: In a blender or food processor, blend turmeric, ginger, shallots, garlic, candlenuts, and coriander seeds into a smooth paste.

  3. Sauté the Spice Paste: Heat oil in a large pot over medium heat. Add the blended spice paste along with the smashed lemongrass, bay leaves, kaffir lime leaves, and galangal. Sauté until fragrant.

  4. Cook the Base: Pour in enough water to create a broth and bring to a boil. Add the bilimbi and carrot slices. Let it cook until the carrots are tender.

  5. Add the Fish: Once the carrots are soft, gently add the fish pieces to the pot. Season with salt, seasoning, and sugar. Cook without stirring too frequently to prevent the fish from breaking apart.

  6. Simmer and Finish: Allow the fish to cook until the flavors have absorbed and the fish is cooked through. Add the okra, and cook briefly. Taste the broth and adjust seasoning as needed.

  7. Add Fresh Ingredients: Stir in the Thai basil leaves, sliced spring onion, and tomato. Cook for a short time until the tomato softens slightly.

  8. Serve: Remove from heat and serve hot, garnished with additional basil leaves if desired.
