  1. Roasting the Ingredients:
    Begin by placing a kadai (wok) on medium heat. Add all the ingredients listed under ‘for roasting’—Chana dal, White Urad dal, Coriander seeds, and Dry Red Chillies. Dry roast these ingredients until the dals start to brown slightly and release a fragrant aroma, which should take about 10-15 minutes. Once roasted, turn off the heat and allow them to cool completely.

  2. Roasting the Chillies:
    In a separate pan, heat 1 teaspoon of sesame oil over low heat. Add the 10 dry red chillies and roast them gently for about 1-2 minutes until fragrant. Remove from heat and set aside to cool.

  3. Roasting the Tamarind:
    Using the same pan, lightly roast the tamarind for about one minute on low heat. Once done, remove it from the pan and let it cool.

  4. Tempering the Ingredients:
    In another pan, heat 1 tablespoon of sesame oil over medium heat. Add the raw peanuts and roast them for 2-3 minutes until they are golden brown. Remove the peanuts and set them aside. In the remaining oil, add the washed curry leaves and fry them until they turn crisp—avoid browning them. Once done, take out the curry leaves and add the mustard seeds to the remaining oil. Remove the mustard seeds once they start to crackle.

  5. Grinding the Powder:
    In a dry grinder, combine the roasted dals, coriander seeds, roasted red chillies, tamarind, jaggery, asafoetida, and salt to taste. Grind everything to a fine powder.

    Transfer the powdered mix to a mixing bowl and combine it with the tempered ingredients (curry leaves, peanuts, and mustard seeds). Ensure everything is well mixed and allow the mixture to cool completely.
