Description:

My wife whipped up this delectable treat, originally intended as a savory addition to baked potatoes, but its irresistible flavor led me to savor it all on its own. While it’s fantastic as a potato topping, I find myself enjoying it straight out of the jar! Bursting with the goodness of bell peppers, onions, tomatoes, and a tangy-sweet blend of pickles and sugar, this relish is a delightful addition to any meal.

Ingredients:

  • 1/2 bell pepper
  • 1/2 onion
  • 1 tomato
  • 1 tablespoon chopped pimiento
  • 2 tablespoons sweet pickle juice
  • 1 tablespoon sugar

Instructions:

Step Instructions
1 Begin by chopping or dicing the bell pepper, onion, and tomato into coarse pieces using your Handy Chopper Plus.
2 Combine the chopped vegetables in a mixing bowl along with the chopped pimiento, sweet pickle juice, and sugar.
3 Adjust the quantities of each ingredient to suit your taste preferences, adding more or less as desired.
4 Mix well to ensure all ingredients are evenly distributed, allowing the flavors to meld together.
5 Serve immediately as a relish for baked potatoes, hot dogs, or grilled meats, or enjoy it straight from the jar.
